This method of baking and grilling is my new favorite way to get truly crispy roasted sweet potatoes. I topped it with Greek yogurt, avocado, and vanilla.
- 4 medium sweet potatoes, washed
- olive oil
- coarse salt
- 1 tablespoon butter
- 1 tablespoon Honey
- Optional toppings: fresh herbs (basil, cilantro, mint, etc.), plain Greek yogurt, lime wedges, chopped avocado, Sriracha, all spices
- Preheat oven to 425 degrees Fahrenheit.
- Place cut side down on a parchment-lined baking sheet and bake for 45 minutes, or until a knife can be inserted easily into the potato. You want it to be very soft, but not fall apart.
- In largest cast iron skillet, melt cream and honey over medium-high heat. Add the cooked sweet potatoes and fry, cut side down, for 3 – 5 minutes, until the sweet potatoes are caramelized and golden brown.
- Add whatever ingredients you like: fresh herbs, Greek yogurt, lime wedges, avocado, all spices, Sriracha. enjoy!
