Why we love it: Curry lovers, this is one of my favorite ways to curb your appetite without ordering or eating out. The chicken and green beans both came out crispy and delicious. I never knew it could be so easy to achieve flavors like this. This dish takes about 30 minutes to cook, plus an hour of marinating time, which in my mind means 30 minutes to end my day.

Why we love it: I think I could eat this every night. Making Szechuan sauce from scratch may seem intimidating at first, but I consider my pantry and spice rack to be fairly amateurish, and even I have all the ingredients on hand. This recipe is also great for meal prep, as the chicken is best marinated overnight (although it still tastes great after a few minutes). I like to chop up the brussels on Sunday night, marinate the chicken, and throw it in after a particularly Monday-like Monday.

It has carrots, cauliflower, onions, and Brussels sprouts, giving you all the veggies, but my personal favorite part is the lemony aioli drizzled on top…I can swim in this sauce.

Why we love it: I love a good Greek moment. I will never forget the first time I went to Greece and I ordered a Greek salad and my world was rocked. They leave out the lettuce and just chop and toss all the delicious ingredients, which reminds me of this recipe. It has all the elements of a delicious Greek salad that you can customize to your liking, but with the warmth of comfort food. What more do you want?

Why we love it: This Sheet Pan Chicken Piccata is perfect for entertaining and a must try.
