This hummus toast with tomato, feta, and za’atar couldn’t be easier, and the end result makes even the most casual spread feel elevated.
Here’s how I make this new favorite: Spread a thick layer of roasted garlic hummus on a slice of toasted sourdough (you can make your own, of course, but store-bought is great too). From there, add a mix of summer tomatoes: heirloom tomatoes, cherry tomatoes, and grape tomatoes, all in a variety of colors for the most aesthetically pleasing effect. After that, salty feta crumbs and fresh basil leaves were just the finishing touch it needed. Finish with a cup of extra virgin olive oil and you’re ready to go.

Toast (or grill) the sourdough and spread a thick layer of hummus on each slice of bread. Hummus should be thick enough to hold the ingredients, but not so thick that it overwhelms the flavor. Choosing store-bought hummus saves a lot of time, and I love using different flavors, like roasted garlic hummus.

Tips about feta cheese
Sprinkle the crumbled feta cheese over the tomatoes. The salty, creamy feta pairs beautifully with the sweetness of the tomatoes and the delicious hummus. Pro tip: I used to always pick up a tub of crumbled feta at the market, and then I discovered that a really good piece of feta can be so much more flavorful and creamy.
Fresh basil and za’ata
Add fresh basil leaves for a burst of herbal freshness. Then, take your Middle Eastern-style toast to the next level by sprinkling it with a pinch of za’atar on top. Za’atar is a Middle Eastern spice blend, usually made from thyme, sumac, sesame seeds and salt, that is fragrant and adds a unique flavor to dishes. You can find it in the spice section of most grocery stores, in specialty stores, or online.
