When it comes to cooking, my origin story is far from linear. It’s hard to pinpoint a moment in my life no In the kitchen. I’m lucky – inspiration is everywhere. My mom is the master of quick and easy after school snacks. Think: carrot hummus toast and masala quesadillas. They are an entry point for recipes and serve more as a guide than hard written rules. And this spicy corn toast? I’ve memorized the basic formula over the years.
These are the go-to homemade snacks for my brother and I when we get home from school. (Luckily, I know.) Usually, my mom would have the ingredients ready for us to assemble ourselves. (Again: lucky.) As a result, we quickly learned how to cook these dishes and snacks for ourselves. So, this corn toast recipe is my little love letter to the always-craving, always-satisfying afternoon snack.
Spicy Corn Toast Ingredients
Afternoon toasts don’t have to be boring. There are countless ways to spice up your everyday avocado toast—and Hello, it’s time for the Ricotta Toast to shine. To add to your summer toast repertoire, this spicy corn toast will celebrate the season in all its sun-kissed glory. With sweet corn kernels, melted cheese, crunchy bread, and a hint of spice, this toast brings warm weather flavors to a head. Oh, did I mention this was all done in under 15 minutes? Unbelievable, I know.
The ingredient list for the no-recipe recipe is short, but they all come together to create the perfect texture.
pioneer. I love it when I can buy good yeast on the market. But use whatever bread you have on hand.
corn. Fresh, frozen or canned, any version will work.
bell pepper. I like to use both red and green bell peppers.
chili. I have used fresh and/or canned pickled jalapenos. Both can work perfectly, it just depends on your desire.
cheese. The more melted the better. Mozzarella cheese, cheddar cheese, or other melted options work best.
Garam Masala. You can find it in the spice section of most grocery stores.
Red chili powder. This is optional, but I like the extra heat.
coriander. Fresh cilantro is a must, but I also like to add leeks or green onions when eating.
Lime. A generous squeeze of lime juice on the toast at the end helps bring out all the flavors.
How to Prepare Corn Toast
This is the ultimate make-ahead snack. My mom would chop all the peppers and throw them in an airtight container with the corn and spices and keep them in the refrigerator. Then, when the toast is ready to be assembled, she adds a little cheese. That’s it!
To prepare the toast, line a tray with parchment paper for easy cleanup and place sliced bread on top. Pile each slice of bread high with the corn topping and add extra cheese on top to make it delicious. You can air fry, broil or bake them to your desired doneness. Sometimes I like my toast melty and gooey, but I also occasionally like to bake it a little longer so the cheese on top gets extra crispy. I wish you great satisfaction!

Trust me, this corn toast is delicious on its own, but my brother and I developed some equally delicious iterations.
Top with mixed herb or mint chutney. Chopped herbs like dill, cilantro, and scallions mixed with a generous squeeze of lime or lemon are especially addictive. Plus, the freshness of the herbs complements the melted cheese beautifully. The mint chutney here is also perfect. The toast stuffed with tomato sauce is also delicious.
Serve with avocado and lemon. Thin slices of avocado and a squeeze of lemon juice make this toast even more substantial. This is perfect for an easy lunch or simple dinner. I even added an egg and a salad on top for a delicious lunch. The options are endless.

- 2 Sourdough bread slices
- 1 cup Fresh or frozen thawed corn kernels
- 1 bell pepper, chopped
- 1/2 Jalapeños, chopped
- 1 teaspoon Garam Masala
- 1/2 teaspoon red chili powder
- salt and pepper to taste
- 1/2 cup grated cheese
- Garnishes: chopped cilantro, lime juice, chutney, etc.
- Get the corn ready. Add corn, bell pepper, jalapeño, garam masala, chili powder, salt and pepper to a mixing bowl. Optional: add some cheese. Mix until combined.
- Place bread on lined tray and spoon over corn mixture. Top with remaining cheese.
- Bake in oven until cheese is melted and golden brown.
- To serve, top with fresh chopped cilantro, lime juice, salt, or toppings of your choice. enjoy!
