These spice-rubbed grilled chicken thighs are an easy grilling recipe that will be on repeat this summer.
- 2 lb boneless skinless chicken thighs
- 2 tablespoons chili
- 2 teaspoons paprika
- 2 teaspoons cumin powder
- 2 teaspoons dried oregano
- 1 1/2 teaspoons garlic salt
- Grind some black pepper
- 2 tablespoons lemon juice
- 2 tablespoons Olive oil, and more for grilling.
- 1 tablespoon Honey
- 1/4 cup pitted green olives, chopped
- 2 lemon, thinly sliced
- Mint leaves and arugula, for garnish
- In a medium bowl, stir together chili powder, paprika, cumin, oregano, garlic salt, and pepper. Add the chicken and stir to coat.
- Heat grill or griddle to medium-high heat. Use a paper towel to coat the grill door with olive oil to prevent sticking. Grill chicken until lightly charred and cooked through, turning occasionally, about 12 – 15 minutes.
- Meanwhile, stir together the lemon juice, olive oil, and honey.
- Place chicken on a plate, top with olives, lemon slices, arugula and mint, then drizzle with vinaigrette. enjoy!
